Chicken Stock

My evening consisted (in part) of putting away several quarts of chicken stock. Homemade healthy, wonderfully nutritious chicken stock. When old Jewish Grandma's say that Chicken Stock is Jewish Penicillin, they are NOT referring to stock from a box loaded with "(un)Natural Flavors" aka MSG. They are talking about chicken bones (and feet!) lovingly simmering in a big stock pot for 24 hours to release all the nutrients and gelatin. By the way... 1 quart of Swansons broth is about $3.50. I made about 6 quarts of stock for about $4.50 using farm raised free range chicken carcasses. I usually use chicken feet which are even cheaper, but this batch I didn't use the feet.
